Tummy Warming Beef or Veggie Casserole – Cooking on a Budget

Every so often I make a recipe from the store cupboard which turns out so good that I have to share and this is one of those. As you know if you read my Meal Planning Monday posts, I like to shop the specials in meat in my store. The other week I came across sirloin steak pieces for €2.00 a packet – I couldn’t pass that up so I brought two and froze them. One went pack went into Mongolian Beef and the other went into this Warming Beef Casserole.

Tummy Warming Beef Casserole ( feeds 4 )

Ingredients 

  • 400g Diced steak pieces – usually €4.00 reduced to €2.00 in Supervalu
  • One Diced Onion  from the 2 for 1 euro deal – Supervalu
  • Red Pepper cubed from the 2 for 2 euro deal – Supervalu
  • Mushrooms 49c from Aldi
  • 1 Beef Stock cubes -from my store cupboard ( I usually get them when there is a deal on)
  • 2 tbsp Tomato Paste – 49c Aldi
  • 2 tsp Paprika again in my store cupboard but cheaply available from both supermarkets 75c
  • 2 cloves Garlic 99c
  • One Tin Of Mixed beans ( optional)  – 49c Aldi
  • Olive Oil – store cupboard 
  • Cornflour

THE HOW TO BIT  

  1. In a pan brown the steak in a little olive oil with the onion, as it browns add in the garlic, I do this so the garlic doesn’t burn .
  2. Add in the mushrooms, peppers and the mixed beans to the pan and keep on a medium heat and stir.
  3. In a jug make up a pint of beef stock and add in the tomato paste and 2tsp of paprika and mix in 2 tsp of cornflour to thicken. I do this by adding a bit of beef stock to the cornflour in a small bowl and then once it is a runny paste, pour it into the rest of the stock.
  4. I add the stock into the pan and then I pop the whole lot into my slow cooker for 4-6 hours.
  5. Now if you don’t have a slow cooker or have the time you could pop it all in a casserole dish in the oven at 180 C / 350 F or Gas Mark 4 for 25 minutes. 

Serve with Brown rice or Mash Potatoes

For the Tummy Warming Veggie Casserole Version 

  • One Diced Onion  from the 2 for 1 euro deal – Supervalu
  • Red Pepper cubed from the 2 for 2 euro deal – Supervalu
  • Mushrooms 49c from Aldi
  • Courgette  chopped 2 for 2 euro deal – Supervalu
  • 1 Vegetable Stock cubes -from my store cupboard ( I usually get them when there is a deal on)
  • 2 tbsp Tomato Paste – 49c Aldi
  • 2 tsp Paprika again in my store cupboard but cheaply available from both supermarkets 75c
  • 2 cloves Garlic 99c
  • One tin of mixed beans   – 49c Aldi
  • Olive Oil – store cupboard 
  • Cornflour  

THE HOW TO BIT 

The difference between these two dishes is the mainly the steak and the stock

  1. In a pan caramelise the onions in a little olive oil and then add the mixed beans, courgette and the garlic. 
  2. Stir in the mushrooms and peppers as before 
  3. Make up 1 pint of vegetable stock , add in the tomato paste, paprika and cornflour 
  4. Place the vegetables, beans and stock into a slow cooker and cook on low in the slow cooker for 4- 6 hours 

Serve with Brown rice or Mash potatoes.

I have made both version and they are delicious and the beef version works out at about €1.70 a portion and the vegetable version is 99c a portion and that is amazing value for such a tummy warming dish.
Want to give it an extra kick add in some chilli powder to your stock mix.
