Menu Planning Monday

Monday Monday so good to me – well it isn’t good weather wise here in Ireland in fact it is more like November than July but I am not going to let that stop me.
Here is to another Menu Planning Monday – haven’t a clue what I am on about or why anyone would menu plan please click HERE for more details. And if you want lots more menu ideas check out the link up on I am an Organizing Junkie.
Below is out menu for next week – as it is the end of the month and money is tight  I am using up what is in my freezer and pantry.

MONDAY

Yesterday we had roast chicken so I have left over chicken and I also have a bag of risotto rice and fresh peas in the garden – so chicken risotto it is.

TUSEDAY


Last week I made Moroccan casserole – it was gorgeous and I had leftovers so I pop them into the freezer and will be having them this week.

WEDNESDAY  


This dish is such comfort food but if you use low fat ingredients you can have the comfort without adding to your waistline – it is a win win if you ask me. The recipe is available HERE.

THURSDAY 

Thursday is also know as shopping day around these parts and I like an easy meal on a Thursday. I have some mini pizza bases in the freezer so I will jazz them up with toppings from the fridge and serve it with salad. 

FRIDAY  


 There are two things I love a lot in Eddie Rockets  one is their milkshakes malts, I love strawberry or banana and the other is their sweet potato fries ,which are part of their healthier choices being low GI. Well sweet potatoes are on special in Aldi so I plan on making my own version of the fries and serving it with the beef grills. I might even try and make milkshakes 🙂


SATURDAY 

There is mince in the freezer and lasagna sheets in the cupboard and a teenager telling me how much she misses it so Lasagna it is this weekend. 

SUNDAY 


The last bit of trout is in the freezer and I will stuff it to the gills with herbs from the garden and then cook up some of the potatoes and peas I have currently in season in the garden. 
And follow it with some Apple and Hazelnut Muffins which might be an autumnal dish but hey the weather is autumnal 🙂

Ten Practical tips to survive marriage break up ! Or how I survived last year !!

Last year as some of you will know my marriage fell apart, I won’t go into the terrible details of how here but suffice to say it was the hardest thing our family have been through and wasn’t pretty for any of us.
While this was all happening I frantically searched the internet for ways to help me out of my situation – the facts were I had no money coming in, no money left in the bank, rent due,bills due, one daughter that needed mental support, support I needed myself and one daughter stuck in different country with college bills to pay and no way home.
 It all seem too much and no one place on the web could tell me how to tackle this huge mountain I seemed to face which is why I thought of writing my experiences down here to help if some one finds themselves at rock bottom.

These are 10 practical tips to Survive Marriage break up – they will not tell you how to mend your broken heart or fix your marriage but will help you move forward.

1. First thing I did and the top thing I recommend is tell your family and friends – be honest no matter how ashamed or bad you feel, these people love you and are on your side and want to help.

2.Next contact you local Citizens Information Office if you have one.
I went in without a clue what to do and came out with at least a vague plan. They will tell you what you are able to claim, who you should contact next and give you a list of other agencies that can help.

3. Being a stay at home mum for the majority of my life I had to get back out into the working world so my next stop was my Local Intreo Office – or job centre. I will admit I was terrified and had no clue what to expect. But I was treated with respect by the staff and they told me what my options were and what was a available in the way of training and benefits and helped me see a way forward.

4. Tell you GP or Doctor what you and your family are going through – my youngest needed a lot of support though this, in fact she still needs it. My Gp was able to get her counselling and support which I wasn’t able to access on my own,

5. Find your Local Community Welfare Officer  they will be able to tell you what help you will be entitled to if any and maybe be able to give you money to bridge the gap before any jobseekers allowance or other money comes in. You can also approach them if you are concerned about your living circumstances.

6. Don’t be afraid or too proud to take offers of help – I honestly would not of gotten by without the kindness of those around me. I had no car and when my neighbor kindly offered to take me to the supermarket it was honestly the best help she could have offered – I am grateful everyday for her help.

7. Contact your Utility suppliers and Mortgage supplies or in our case landlords immediately and let them know what is happening. I have found the more up front you are with them the more helpful they are at giving you leeway to pay – after all it is in their best interests in the long run.

8. If you find it hard to budget contact an association like Mabs  or look online for budgeting plans like Good Budget they have great advice and lots of ways to help you manage your budget if you feel unable to.

9. If you need help with legal problems but feel you haven’t the money to hire a solicitor – there is Legal Aid available, there is a waiting list,so the quicker you approach them the better. If you can afford a solicitor get one straight away.

10. Contact your child’s school – this might seem a bit odd but in the long run was one of the better things that I did. My daughter reacted badly to what happened, if the school were unaware of things at home they would not have been able to offer her the support they did.  They really did try and make things better for her.

I am happy to say a lot has happened in a year,things are better (even if I have had a health blip) and I am proud to say that not only did I pass my exams to get into college this year but I also am now in full time employment via an internship I was offered.

If you are in the scary position I was last year please know that no matter what you face, if you find yourself on the bad end of a break-up there is support out there for you and you too will get through this.

Menu Planning Monday

This week I am relying on my freezer and my slowcooker a bit as I am back to the hospital today – not for too long this time though, if you don’t know what I am referring to check out this Post .
Menu Planning Monday and my family journal got me though the first time and will help me out this week too. If you are looking for a wide range of menus check out the link up at I am an Organizing Junkie for lots for menus catering to all tastes.


So here is this week’s menu below and in honor of National Ice-cream day – who doesn’t like Ice-cream !! I making some Chocolate Cherry ice cream to pop in the freezer.

MONDAY 


Spaghetti Bolognese, this old favourite is going in the slowcooker today and will be ready this evening when people get home , I have even added the pasta to this dish so no need to think about it – just dish it up.

TUESDAY

Another dish that can be done in the slow cooker is Moroccan Pork Casserole  I love a throw it all in and let it cook recipe and you can prepare this in advance and store it until you need it in the freezer.

WEDNESDAY


So easy even the teenagers can make this dish Chorizo and Garden Vegetable pasta is an easy dish to make and great if you are lacking in time or energy.

THURSDAY

Thursday I usually go shopping after work and when I arrive home I am hungry, cranky and tired. I have been know to cheat with pizza – here I brought plain pizza and loaded it with toppings at home. If you are feeling adventurous you can make your own base – HERE. But I see no problem with cheating once in a while ! 


FRIDAY

I sometimes pick up bargains if they are in the shop, last week my local supermarket reduced it’s beef grills to under half price , so I picked some up for the freezer. Picking up food when it is on special offer is a great way to keep your food bill down but only if it is food your family eats.


SATURDAY 


I was going to let my lot eat leftovers which would be the easy option but if that does not work out this Easy Carbonara is not hard to throw together and is always a winner.

SUNDAY 

Last weeks Roast chicken with Artisan Bread and Salad was a winner so I may do something similar this week and to for dessert Chocolate and Cherry Ice-cream – for lots of cherry recipes click HERE  – yummy !!

Easy Chinese Chicken

You know those weekends when surprise guests turn up and you are stuck for ideas, well that happened this weekend to me. Meal Planning hadn’t accounted for that !! 
 And thanks to Aldi having a special offer on Chinese chicken pieces and a meal was born.

EASY CHINESE CHICKEN with Five spice stir-fry and wholemeal noodles chow mein style.

INGREDIENTS 

  • Chinese Chicken legs from Aldi – Link here  ( there until Wednesday the 22nd July) 
  • Frozen stir fry Asian Vegetables ( so handy and cheap – I always have a bag in the freezer)  
  • Wholemeal noodles 
  • Garlic 2 cloves crushed 
  • small piece of ginger chopped fine 
  • 2tsp Five Spice
  • Sesame oil.
  • 4 tsps dark soy sauce
  • 4 tblsps light soy sauce
  • 4 tblsps oyster sauce ( or hoisin ) 
  • 1 tblsp cornflour
  • 2sps brown sugar 
THE HOW TO BIT 

  1. But the chicken legs in the oven and cook as instructed, told you this was easy. 
  2. Heat up a wok with sesame oil in it and add the garlic and the garlic and the frozen veg, add in the five spice as you stir.
  3. Cook the noodles in a pot and drain and set to one side.
  4. To make the chow mein sauce  – put the soy sauce, light soy, oyster sauce, cornflower and sugar into a pot and cook until thickened then add in the noodles and coat thoroughly just before serving. 
You can add the veg to the noodles – mine prefer them separate. 

Want to make this a Chinese style banquet – serve with spring rolls for starters and Pineapple Fritters in Syrup with ice-cream for dessert and your guests will love you for it and think you are a star.

Menu Planning Monday

When menu planning I always check out what is in my freezer and pantry first – for example we have a lot of plums thanks to a special offer so plum and apple slices are perfect and I have some pasta sauce to use up so spaghetti and meatballs it is, you get the idea. so here is this weeks menu. 



MONDAY


Aldi have a special offer on these yummy chicken thighs at the moment for only €2.00 so I grabbed a couple for the freezer. I throw them in the oven with extra lemon wedges and herbs from the garden and bake. I plan on serving them with veggies I have been harvesting from the garden , the potatoes and peas are ready.



TUESDAY

Sometimes you just have to go for an old favourite and an easy recipe and nothing could be easier than Spaghetti and meatballs. As I said I have pasta sauce in the fridge that need to be use up and this dish hits the spot every time. 

WEDNESDAY


Brinner – or Breakfast for dinner is one way to get the kids to love you, mine adore Brinner and there is no better excuse for pulling out the waffle maker and whipping up some waffles. Serve with Bacon and Maple syrup and they are divine.

THURSDAY



Sometimes someone links up something on Facebook and you just have to try it – this is how I found this recipe for SlowCooker Cashew Chicken from The Recipe Critic  . I love slow cooker recipes which are great for work, just pop it on slow in the morning and you come home to a house full of gorgeous smells and dinner. Check out The Recipe Critics menus too – I am loving her site.

FRIDAY 

Bacon, Chorizo Gratin  is an easy comfort food to make and you can make it as luxurious or as healthy as you like. It is my nod to Irish food as my lot are not big Bacon and Cabbage fans.

SATURDAY


I am keeping my fingers crossed that the weather will improve, which maybe foolish in Ireland but one can always hope and these Chinese Chicken Skewers are great on a Bar-be-que but can be done on the oven grill just in case of a downpour. 
Served with cous cous and a big salad and you have a great meal.

SUNDAY 

I love a roast chicken but in summer I serve it with crusty bread and salad , Sometimes I buy the bread but it is just as easy to make this amazing loaf  especially when the oven is on anyway. The smell alone is worth the extra effort . For dessert this Easy Plum and Apple Slice is great and as I said plums are on special offer in Aldi and so is the pastry to make it even easier !!

How the "Kon Mari" Method helped me clean out my Closet



If you are on the web at all and looking for Organisation Ideas you may have heard about the “Kon Mari” Method by Japanese cleaning consultant Marie Kondo. I am a big fan of making my life more organised so I had to have a read. 
She has a book out called THE LIFE-CHANGING MAGIC OF TIDYING UP” it is an interesting read all about getting your life organised. There is a right and wrong way to tidy up a space according to Marie Kondo, and we have all been doing it wrong !! 

So I decided to follow some of her method and see if I could finally get my wardrobe into some sort of order. This is the story of how I got on. 


GETTING STARTED 

First things first the KonMari method insists you do this in one fell swoop – no little and often with this method – you are tidying up once and for all.  So don’t pick a day when you are busy, I did this over a weekend and some people can take weeks, I suppose it depends on how much stuff you have to sort. 
And to start you get all your clothes and put them on the floor or in my case my bed just to see how much stuff you have accumulated and that means clothes from all over the house – frightening stuff I can tell you.

THE SORTING PART  
The general gist of the method is you should only keep an object if it “sparks joy” if it doesn’t thank it for its service and consign it to the charity bag or bin.

Or as my Nana would call it “if in doubt throw it out” – wise women is my Nana. 

Do not keep things that might fit “one day” or even ones you kept for sentimental reasons, the likelihood of you ever wearing those skin tight stonewashed denim you had when you were 19 to your first gig , is slim !! 
Have black bags or boxes handy – one set for donating and one for the bin, there are just somethings that are passed rescuing. 


THE STORING PART

I believe and so does Miss Kondo,that everything should have a place. Luckily for me I have a walk-in wardrobe, now before any of you think wow she must live in a palace or mansion,I do not,  it is a small walk in wardrobe built over the stairs, all the houses in this estate have one. 


I got some new velvet hangers for the hanging clothes and started to arrange them – now this is where Miss Kondo and I disagreed,she hangs things by type and goes from heavy to light things -left to right.
I go by colour instead of type because I love the way it looks although I also go from heavy to light. 



I have shelves which have my winter jumpers and my summer jumpers on one shelf, cardigans and light zip tops on the next shelf and then the third shelf has my  work trousers on one side and leisure trousers on the other. 

The bottom shelf has my long boots in it currently. 

THE FOLDING PART 

As for the things in my dresser, the Kon Mari method is big on folding and storing things vertically   “When we take our clothes in our hands and fold them neatly,”  writes Marie , “we are, I believe, transmitting energy, which has a positive effect on our clothes.”`


There are a multitude of  videos of how to fold things this way on the internet to see one click here  which might seem a bit of a faff – but I have been doing it for about three weeks now and it is becoming second nature and I fold them straight from the line like this, I just wish I had deeper draws. 
I actually like that I can see all my tops and have done the same thing in my daughter’s drawers and she loves that she can find all her tops at a glance. 


I also used this method to sort out my bags and shoes – and I now have a home for all my evening bags. 

Has it made a difference ? Yes it has ! I find getting ready in the morning much easier now I can see what I have and I no longer struggle to find things. I do feel lighter and more organised so much so I have implemented her methods around the house not just in my closet. 
And I like the idea that the things in my house are ones that bring me joy – there is something nice about that. 
So Marie Kondo – Tidying up is life-changing and magical you were right 🙂
